2-Ingredient Banana-Oat Bites

I'm sooooo late in joining this month's Little Thumbs Up event! But better late than never. :P

We brought our 19mo little toddler to Club Med Cherating earlier this month. Then, we also brought him along to our first 6D5N international vacation of the year - we went to Taiwan. :) So there goes my baking and cooking time. Haha.

These healthy banana-oat bites are so easy and fast to make. They are dairy-free, gluten-free, nut-free, egg-free, sugar-free!

However, if you prefer sweeter cookies, you can add in other ingredients such as chocolate chips, raisins, dried cranberries, etc.

Ingredients:
(Makes 22 1-inch cookies)

2 ripe large bananas (I used local Malaysian pisang rastali)
2 cups organic rolled oats


Bananas & rolled oats

How to:

1. Preheat oven to 175°C. Line a baking tray with baking sheet.

2. Place oats in a food processor and blend until you get the consistency of flour.

3. In a large bowl, mash the bananas and combine with ground oat flour until smooth.

Note: If you're adding other ingredients, add in 1/2 cup of your favorite add-ins at this point.

4. Scoop dough by large tablespoons onto baking sheet and flatten them a bit with a wet spoon. Bake for 20 minutes or until cookies are set. Remove from oven and cool on wire rack.

Before baking.

I packed cooled cookies in a seal-able food-grade bag.

They have neither the texture of crunchy nor soft-baked cookies, that's why I called them bites. Their texture is more like homemade bread. They are best eaten within the day because they become rather chewy the next day if you leave them in open air.
