10 sweet & savory breakfast ideas! - #breakfastseries


In case you missed, I have these #breakfastseries posts on my blog for quite some time whereby I post recipes perfect for brekkie or light brunch. :)

As always, after weeks of creating recipes, snapping & editing photos, and drafting this blog post, I now have 10 really nice recipes for sweet and savory breakfast ideas. I hope you will like them as much as I do. Some are great for kids with hearty appetite. :)



Banana "Split" with Yogurt & Maple Syrup

Ingredients:
(Serves 1)

1 medium banana
1/4 cup Greek yogurt
1 teaspoon pure maple syrup
A handful fresh blueberries
Some sunflower seeds

How to:

Peel and split the banana lengthwise. Lay the two halves on a plate. Scoop the yogurt and put it between the banana halves. Drizzle the maple syrup over the bananas and yogurt. Top with blueberries and sprinkle with sunflower seeds.



Steel-cut Oatmeal with Fruits & Seeds

Ingredients:
(Serves 1) 


1/2 cup steel-cut oats
1 cup water
1 tablespoon molasses sugar (optional)
1/2 cup fresh milk
1 small banana, cut into 1/2-inch slices
1/2 ripe Packham pear, cut into 1/2-inch cubes
A handful fresh blueberries
Some sunflower seeds
Some flax seeds

How to:

Cook the oats with water and sugar (if using) for 12 minutes over the stove. Once done, remove from the heat and pour into a bowl. Scatter the fruits over the top and sprinkle with sunflower seeds and flax seeds.



Braised Pear in Caramel Sauce

Ingredients:
(Serves 2) 


4 medium ripe Packham pears
1/4 cup demerara sugar
1/2 cup heavy cream
2 tablespoons sunflower seeds

How to:

Preheat oven to 220°C. Split the pears lengthwise and remove the core. Arrange them (flat side down) in an oven-safe round baking dish. Sprinkle sugar on top of the pears. Bake for 35 minutes or until sugar caramelizes. Add heavy cream and bake for about 15 minutes longer. Let cool so that the sauce thickens. Serve at room temperature, topped with sunflower seeds.



Yogurt Smoothie Bowl with Fruits & Seeds

Ingredients:
(Serves 1)
 

1/2 cup rolled oats
1 cup Greek yogurt
1 cup fresh milk
A handful fresh blueberries
Some sunflower seeds
Some flax seeds (brown & golden)

How to:

Soak the rolled oats in warm water overnight. The next morning, drain the oats and discard the water. Pour oats into a bowl, stir in Greek yogurt and milk until combined. Scatter blueberries over the top and sprinkle with sunflower seeds and flax seeds.



Breakfast Smoothie Bowl

2 tablespoons chia seeds
 1/2 cup rolled oats
1 cup Greek yogurt
1/2 ripe Packham pear, cut into 1/2-inch cubes
1 teaspoon pure maple syrup

How to:

Soak the chia seeds in 1/4 cup water overnight. Soak the rolled oats in warm water overnight. The next morning, drain the oats and discard the water. Scoop Greek yogurt into a bowl. Pour oats onto the yogurt. Pour the chia seeds gel onto the oats. Top with pear and drizzle with pure maple syrup.

Whole Wheat Blueberry Banana Bread




Breakfast Egg Muffins

Ingredients:
(Makes 8)

6 eggs, room temperature

2 tablespoons fresh milk
1 cup fresh shiitake mushroom, chopped
1 cup frozen mixed vegetables, don't thaw
1/2 red bell pepper, cut into 1/2-inch pieces
1/2 cup fresh homemade elbow pasta
Salt & ground black pepper, to taste 
1/2 cup shredded Cheddar cheese
 
How to:

Preheat oven to 200°C. Brush 8 muffin cups with vegetable oil generously. Beat the eggs with fresh milk until combined. Add in all other ingredients except cheese. Mix until combined. Spoon the mixture into the prepared muffin cups. Top with shredded cheese.

Bake for 30-35 minutes. Leave to cool for 10-15 minutes before removing. Use a sharp knife to go around the muffins to loosen them before removing gently.



Sausage & Cheese Bread Pudding

Ingredients:
(Serves 4) 


3 tablespoons unsalted butter
4 pork sausages, casings removed, cut into round slices
1 medium red onion, chopped
1 long French baguette, cut into 1-inch cubes
2 cups grated Cheddar cheese
6 large eggs
1 cup cooking cream
1 cup fresh milk
Salt & ground black pepper, to taste
3 thyme sprigs

How to:

Grease an 8"x8" baking dish with butter. Set aside. Melt butter in a frying pan over medium-high heat. Add sausages and cook until browned. Remove the sausages and place them in a large bowl.

Turn down the heat to medium, add onions and cook until caramelized. Then, add the onions to the sausages. Add in bread cubes and grated Cheddar. Toss well and scoop this mixture into the prepared baking dish.

In another bowl, whisk together eggs, cooking cream, milk, salt, and pepper. Pour this egg mixture evenly over the bread mixture. Add the thyme sprigs. Cover tightly with a transparent wrap and keep refrigerated overnight or at least 3 hours.

The next morning, take the baking dish out from the fridge and let it warm up to almost room temperature. Preheat the oven to 180°C. Bake for about 45 minutes, until the top is golden brown. Serve immediately.



Homemade Pizza

Ingredients:
(Serves 2)


3 multi-grain wraps
1/2 cup Mozzarella cheese, shaved
1 tablespoon salted butter
1 tablespoon all-purpose flour
1/2 cup milk
2 breakfast ham, cut into strips 
2 smoked streaky bacon, cut into strips
1 small yellow bell pepper, cut into strips
6 small fresh shiitake mushroom, cut into strips
1 cup Mozzarella cheese, shredded
1/2 cup Monterey Jack cheese, crumbled
Salt & ground black pepper, to taste

How to:

To make the pizza base: Spread the shaved Mozzarella cheese between the three multi-grain wraps. Set aside. At this point, preheat the oven to 200°C.

To make the basic white sauce: Melt butter over medium heat in a small saucepan. Add flour and stir until well combined. Pour in milk, stirring constantly as it thickens.

To assemble: Spread the white sauce on the topmost layer of the wrap. Top with with the rest of the ingredients.

To cook: Bake in preheated oven for about 15-20 minutes or until the cheeses have melted. Serve immediately.

Simple Goan Fish Curry


Simple Goan Fish Curry

It's IHCC's potluck week. I have cooked a pot of hearty, chunky minestrone. And, I also cook a pot of Simple Goan Fish Curry by Diana Henry, one of the 12 chefs listed on IHCC.

Ingredients:
(Serves 4) 

For the curry paste:
1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon curry powder
1 teaspoon ground turmeric
1 teaspoon ground ginger
4 garlic cloves, crushed
3-4 tablespoons extra virgin olive oil
1 small red onion, finely chopped
1 green chili, halved, deseeded and finely sliced
3 small yellow bell pepper, finely chopped
2/3 cup tiny tomatoes, finely chopped
1 teaspoon pink Himalayan rock salt

Other ingredients:
500g firm white fish fillets (I use local ikan tenggiri), cut into 1-inch chunks
1 & 1/2 cup plain yogurt
1 tablespoon molasses sugar




How to:


1. Put all ingredients for the paste in a mini food processor. Grind until mixture becomes a paste.

2. Heat up some oil in a frying pan over medium heat. Stir in the curry paste. Cook, stirring continuously, until fragrant. Add splashes of water if the paste is drying up.

3. Season the fish with salt, then add them to the curry paste. Simmer gently over medium heat, stirring occasionally until they are cooked through.

4. Turn down the heat and stir in plain yogurt and molasses sugar. Simmer for a few minutes, until the sauce has thickened slightly. Taste for seasoning. Serve with rice.

Chunky Minestrone


Chunky Minestrone

It's IHCC's potluck week. Time for some really hearty minestrone! And this time I find inspiration from Yotam Ottolenghi, one of the 12 chefs listed on IHCC.


Recipe adapted from here.

Ingredients:
(Serves 3-4) 

1 cup radish (1-inch cubes)
1 cup cucumber (1-inch cubes)
1 cup potato (1-inch cubes)
1 cup pumpkin (1-inch cubes)
1/2 cup beetroot (i-inch cubes)
1/2 cup frozen green peas, thawed
1/2 cup cherry tomatoes, halved
1 cup French beans, cut into 1-inch strips
1 large red onion, cut into 8 wedges
1 large rosemary sprig
6-8 cups homemade beef stock
1 cup uncooked orzo pasta
Salt and black pepper
Some extra virgin olive oil

 

How to:

1. Put all ingredients (except salt, pepper, and olive oil) into the stainless steel inner pot of the thermal cooker. Put the pot over the stove and bring to a boil. Once boiling, decrease the heat and let it simmer for about 40 minutes.

2. Once done, remove the rosemary sprig and season the minestrone with salt and pepper. Then, place the pot into the thermal cooker, close the cooker's lid, and set aside for another 40 minutes to 1 hour.

3. When it's time to serve, ladle the minestrone into bowls, drizzle with extra virgin olive oil, and serve immediately.

Whole Wheat Blueberry Banana Bread

Blueberries. Bananas. I got these two gorgeous fruits to "marry" one another and baked a loaf of quick bread packed with wholesome goodness!

Ingredients:
(Yields one 9"x5" loaf)

2 cups whole wheat flour
1 teaspoon baking powder
1/4 teaspoon salt 
2 tablespoon molasses sugar 
1 tablespoon virgin coconut oil
2 large egg whites, room temperature
1 teaspoon pure vanilla extract
3/4 cup mashed ripe banana
1/4 cup Greek yogurt
1/4 cup fresh milk
1/2 cup fresh blueberries
1/4 cup dried blueberries
1 tablespoon flax seeds
1 tablespoon sunflower seeds
2 teaspoons demerara sugar (optional)


How to:

1. Preheat the oven to 175°C. Line a 9”x5” loaf pan with baking paper.

2. In a small bowl, whisk together flour, baking powder, salt, and sugar. In another bowl, whisk together coconut oil, egg whites, and vanilla extract. Stir in mashed banana, Greek yogurt, and milk.

3. Combine flour mixture into the wet ingredients mixture. Fold gently with a rubber spatula until just combined. Fold in both types of blueberries until combined. Be gentle. Batter will be thick.

4. Spread the batter into the prepared loaf pan. Sprinkle flax seeds, sunflower seeds, and demerara sugar (if using) over the top.

5. Bake for 50 minutes, or until a toothpick inserted into the center comes out clean. Cool in the pan for 10 minutes before transferring to a wire rack.

I love my banana bread with visible banana chunks.

Crunchy top from the demerara sugar and seeds.

This loaf is gone within three days!

#1 - EcoHaus Concentrated All-Purpose Cleaner/Degreaser – Spray Bottle (16oz / 473ml) 

For day-to-day housekeeping, this concentrated all-purpose cleaner is perfect and safe to use on furniture, counter top, kitchen stove, oven, dining table; basically anything in the kitchen. I like!

I use it mainly to clean my toddler's chair and the surrounding floor after his meal times. I also use it to clean my kitchen stove from oil and food stains after cooking. Just spray and wipe with wet cloth. Or dilute a capful in a basin of water before using. Fast and convenient! Thumbs up!

My hubby uses it to as a degreaser to clean his mountain bike chain.

#2 - PROXI® Multi Surface Cleaner (Hydrogen Peroxide-Based Cleaner) - 500ml

Now, this is a specialized, versatile product. Not to be confused with the concentrated all-purpose cleaner, this multi surface cleaner is best used for removing organic stains and odor on carpet, upholstery, and curtain. Also great for removing stains, hard water deposit build-up, soap scum stains in toilet, shower surface, grouting and concrete floor.

#3 - Enviro Care® Washroom Cleaner - 500ml 

As the name suggests, this product is used mainly in the toilet – basin, wall, floor, toilet bowl, etc – for day-to-day or weekly cleaning. Good to use together with the Multi Surface Cleaner in point #2 if you want.

#4 - Enviro Care® Glass Cleaner - 500ml

As the name suggests, this product is used to clean glass. This solution leaves windows, mirrors, formica, ceramic tile, and all other polished surfaces squeaky clean, free of streak, and hard water deposits.

#5 - Toilet Seat Cover - 20 sheets per pack


This product is a life-saver. Before I use this product, I always have to waste lots of toilet paper by layering them on the toilet seat (public toilet) before I sit down. Now, I just need to take out one toilet seat cover, lay it down on the seat, and do my business in peace. Thank you for this! It can be flushed down the toilet too!

Breakfast Ideas with Blueberries Chia Jam - #breakfastseries


In case you missed, I have these #breakfastseries posts on my blog for quite some time whereby I post recipes perfect for brekkie or light brunch. :)

This time round - after weeks of creating recipes, snapping & editing photos, and drafting this blog post - I now present to you these easy breakfast ideas with blueberries chia jam.

I have ditched store-bought-sugar-filled-jam-bottles and make my own fresh chia jam with fruits in small batches, to be consumed within 3 days when kept in the fridge.

Here you go! Hope you enjoy these breakfast ideas; they are great for little ones too. :)



Blueberries Chia Jam

Ingredients:
(Yields about 1 cup)

2 tablespoons chia seeds
1 cup fresh blueberries
2 tablespoons pure maple syrup

How to:

1. Put chia seeds in a small bowl, add 4-5 tablespoons of water and stir to combine. Let chia seeds sit until water is absorbed and mixture becomes soft, about 10 minutes.

2. Lightly cook blueberries with maple syrup over low heat for about 10 minutes. The berries should be slightly burst by then. Mash them up with a fork. Set aside to cool for about 10 minutes.

3. Spoon the hydrated chia seeds into the berry mixture and stir to combine, using fork to break up lumps of chia until evenly combined. Let sit for 30 minutes in the fridge to allow the mixture to thicken into a jam-like consistency.



Yogurt Buttermilk Pikelets
(served with Blueberries Chia Jam)

Ingredients:
(Makes 20-22 pikelets)

1 cup unbleached all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1 tablespoon molasses sugar
1 cup plain yogurt
1/2 cup buttermilk
1 egg

How to:

1. In a bowl, mix flour, baking powder, salt, and molasses sugar until well combined.

2. In another bowl, mix together yogurt, buttermilk, and egg. Stir wet ingredients into dry ingredients.

3. Heat up a frying pan and lightly grease with vegetable oil. Scoop one tablespoon of batter by using the measuring spoon set's tablespoon onto the hot frying pan.

4. Cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side. Repeat with remaining batter.

5. Layer the pikelets with blueberries chia jam and stack them up.



Pancakes with Yogurt & Chia Jam

This is really simple. Just make your favorite pancakes / pikelets. Serve them with your favorite yogurt (plain or Greek is good). Then, spoon some chia jam on top. Add dried blueberries to boost your daily intake of antioxidants. :)



Breakfast Crepes

Ingredients:
(Makes 9 crepes) 

1 cup unbleached all-purpose flour
1 tablespoon molasses sugar
1/4 teaspoon salt
1 & 1/2 cups whole milk
4 large eggs
3 tablespoons virgin coconut oil

How to:

1. In a blender, combine flour, molasses sugar, salt, milk, eggs, and oil. Blend for about 30 seconds until mixture is smooth. Let the batter sit for 15-20 minutes at room temperature before cooking.

2. Heat a 12-inch non-stick frying pan over medium heat. Lightly coat with cooking oil. Pour about 1/3 cup of batter into the pan. Tilt and swirl until the batter covers the base evenly.

3. Cook until the edge of the crepe begins to curl and the bottom is light brown. Loosen with a rubber spatula and flip to cook the other side until done. Repeat with remaining batter.

4. To serve, spread crepe with chia jam and fold.

Another way of eating crepes (more suitable for adults, not kids): Spread the crepe with Nutella (or any nut butter), put a banana in the middle, roll and cut into chunks. :)

Each box comes with four mooncakes (with four different flavors, i.e. lotus, pandan, single egg yolk, red bean). In the box are also four paper slips printed with children's rights statements as well. I find this very thoughtful and educational.

Everything is homemade - the skin, the paste. Lovely!
