Okay, after the who and why, now take a look at what I did with my purchases from Freshcart. :)

  
Figs forever!


Top left: I love to top my plain, sugar-less oatmeal with assorted dried fruits. In this case, dried blueberries (from iHerb), dried cranberries (from Freshcart), dried fig (from Freshcart), and pitted dates (from my mom-in-law).

Bottom left: My toddler loves these: Dried cranberries, dried fig, fresh blueberries (all from Freshcart).

Top right: My breakfast platter one fine morning a few months ago. You can see fresh figs (from Freshcart), huge pisang berangan (from Freshcart), and dried mission figs (from local grocer).

Bottom right: This picture-perfect breakfast bowl is just so pretty. You can see Greek yogurt (from local grocer) topped with caramelized figs (from Freshcart) with butter and pure maple syrup, and Alpha bits cereal (from local grocer).


Breakfast ideas (with recipes!)


Top left: Avocado & Tomatoes Scrambled Eggs

Yes, you can add avocado into your scramble eggs. They are delicious! Melt some butter, stir fry garlic, tomatoes (preferably halved cherry tomatoes), and eggs. When the eggs are almost cooked, add in a pinch of salt and avocado (cut into cubes). Stir for about a minute and dish it up. Top with Parmesan cheese and freshly ground black pepper. Voila!

Bottom left: Avocado & Baby Peas Mashed Potatoes

Cut 5-6 small potatoes (I use Aussie chat potatoes) into chunks. Put them into a pot of salted water and bring to a boil. While the potatoes are cooking, blanch the baby peas (I use Watties frozen baby peas) in another pot of boiling water. Once the potatoes are fork-tender, drain and mash with half of an avocado, some milk, and the baby peas. Tada!

A note about buying avocados: To be honest, I hate choosing and buying avocados on my own. They usually turn out to be too unripe or too ripe or I got cheated by the fruit sellers. Duh. So, when Freshcart is selling Hass avocados, I trust them in doing the choosing part for me. True enough, the avocados they choose are always perfect and ready for next-day's consumption. My money is well-spent! Yay!

Top right: Power Breakfast Oatmeal Bowl

Cook steelcut or rolled oats in a pot of boiling water. Once cooked, stir in some milk of your choice (I love dairy). Top with your favorite toppings. For my bowl, I use mini tangerines, mixed fruits & nuts, and fresh blueberries. Yummy!

Bottom right: Creamy Spinach Oatmeal Bowl

Bring some water to a boil in a pot. Add in rolled oats and cook until 80% water is absorbed. Add in chopped spinach and one beaten egg. Whisk until completely cooked. Remove from heat, stir in cream cheese, and mix until smooth. Time to eat!

Avocado Blueberries Yogurt Smoothie

Ingredients:
(Serves 2)

1 ripe avocado, cut into chunks
1 handful fresh blueberries, frozen & don't thaw
1 cup Greek yogurt
1 cup fresh milk

Put all ingredients into a blender and pulse until smooth. If the smoothie is too thick, add more milk to thin it out until you get the consistency that you like. If you like your smoothie to be sweeter, you can add 1 tablespoon of honey.

Cheddar Buttermilk Biscuits - #breakfastseries


Cheddar Buttermilk Biscuits

I can't believe November is coming to an end soon and December is just around the corner! Whenever IHCC announces the arrival of its potluck week, it reminds me that month is ending in seven days' time. Gosh, how time flies! 

For this November's potluck, I make Mark Bittman's Buttermilk Biscuits. I add Cheddar cheese and call them Cheddar Buttermilk Buscuits. :)

Recipe adapted from Mark Bittman's "How to Cook Everything".

Ingredients:
(Makes 12 2-inch biscuits) 

2 cups unbleached all-purpose flour, plus extra for rolling
1 tablespoon baking powder
1 teaspoon salt
5 tablespoons cold butter, cut into chunks
1 cup buttermilk
2/3 cup grated Cheddar cheese

How to:

1. Preheat oven to 200°C. Line a baking tray with baking sheet.

2. Combine flour, baking powder, and salt in a large bowl. Cut butter into flour mixture with a pastry cutter until the mixture resembles coarse crumbs. Pour in buttermilk and Cheddar cheese. Stir until the mixture starts to form a dough.

3. Turn out dough onto a surface dusted with flour. Gently knead 3 or 4 times and pat into 3/4-inch thickness. Use a round cookie cutter to cut into round biscuits. Place them on the prepared tray.

4.  Bake for 15 minutes or until golden brown.


I'm gonna make more of 'em yummy cheesy biscuits!

These biscuits are good for breakfast and tea break. For older toddlers who don't have dairy allergy, these biscuits make good snack and finger food.

Pasta Frittata - #breakfastseries


Pasta Frittata

This week at IHCC, we are making Ellie Krieger's scentsational (brilliant word play!) side dishes. To me, when it comes to side dishes, the few recipes that come to mind are mashed potatoes, salad, casseroles, baked vegetables, etc.

I have actually made Ellie's Parmesan Mashed Potatoes for breakfast the other day but I guess I should make her pasta frittata as well. :)
 



Recipe adapted from Ellie Krieger's Spaghetti Frittata.

Note: Ellie used spaghetti, tomatoes, and spinach. I used capellini, mushrooms, and chives.

Ingredients:
(Serves 2)

2 tablespoons vegetable oil
1 small red onion, chopped
1/4 cup chopped button mushroom
1/4 cup chopped chives
1 cup cooked capellini (thin long pasta), chopped into short strands
3 eggs
Salt & ground black pepper, to taste
1/2 cup grated Cheddar cheese


How to:

1. Heat up oil over medium-high heat in a non-stick shallow frying pan. Cook onion until soft and fragrant. Then, add mushrooms and cook until soft. Add chives and cook until soft.

2. In a bowl, combine chopped pasta with eggs, salt, pepper, and grated Cheddar cheese. Pour into the frying pan and turn the heat to medium-low. Let the mixture cook undisturbed until the top becomes firm, about 10 minutes.

3. Once cooked, remove the pan from the heat. Loosen the frittata gently with two spatulas and slide carefully onto a serving plate.


Breakfast is served. :)

My pan is too large for a 3-egg frittata, hence the flatness.

The addition of pasta into frittata is a brilliant idea!

Recipes featuring caramelized figs and fig relish from Mutiara Figs


Banana Steelcut Oatmeal

Ingredients:
(Serves 2)

2 cups water
1/2 cup steel-cut oats, soaked overnight & drained
1/4 teaspoon salt
1 cup full-cream milk
1 medium banana, mashed
1 medium banana, sliced
2 tablespoons caramelized figs

How to:

1. Bring water to boil over high heat in a deep pot. Add oats and salt. Turn down the heat to medium and simmer for about 20 minutes, stirring occasionally.

2. Then, stir in milk and mashed bananas, whisking to combine. Simmer for another 10 minutes. Remove from heat, ladle into a bowl, and serve banana slices and caramelized figs.

Note: I don't add sweetener (sugar / honey / maple syrup) into the oatmeal because the caramelized figs provide natural sweetness.



Parmesan Mashed Potatoes

Ingredients:
(Serves 2) 

2 medium potatoes, peeled and cut into 1-inch chunks
1/4 cup buttermilk
1/4 cup milk
2 tablespoons grated Parmesan
Pinch of salt
1/2 tablespoon unsalted butter
2 tablespoons fig relish

How to:

1. Fill up a deep pot with water. Put in the potatoes until they are fully covered with water. Bring to a boil, then reduce heat to medium and simmer for 10 minutes until the potatoes are fork-tender.

2. Meanwhile, mix buttermilk and milk together in a pot. Warm up the milk mixture over low heat. Make sure the mixture does not boil.

3. When the potatoes are cooked, drain and add the warmed milk. Mash together until you get your desired consistency. Then, stir in cheese, salt, and butter. Top with fig relish.

The caramelized figs - sweet and sticky - taste like fig jam with chunky fig pieces. I tried to eat one spoonful directly from the jar. Oops. It was definitely too sweet to my taste. However, adding them to oatmeal or spreading them on bread is another story altogether. They are great with yogurt, ice cream, smoothie bowl, parfait, pudding..... you name it!

The fig relish - savory and tangy - is a delightful add-on to savory dishes such as mashed potatoes, cheese-and-crackers, fries, savory oatmeal, porridge, dips..... the possibility is endless!
