Rice Cooker Chicken and Mushroom Rice

I'm excited to show you some recipes that I've cooked using my Philips Avance Collection Fuzzy Logic Rice Cooker.

Rice Cooker Chicken and Mushroom Rice

Ingredients:
(Serves two adults + 1 preschooler)

1 Kee Song chicken thigh (and wing)
Salt & pepper
1 tablespoon organic mushroom powder by MommyJ Homemade
1/2 tablespoon organic turmeric powder
Grapeseed oil (or any vegetable oil)
1 medium red onion, coarsely chopped
2 cloves garlic, fine chopped
1 inch fresh ginger, thickly sliced
1 red chili, seeds removed and sliced
1 cup of fresh shiitake mushrooms
2 cups multigrain rice, washed
4 cups water

How to:

1. Marinate chicken with salt, pepper, mushroom powder, and turmeric powder. Set aside for at least an hour.

2. Heat up grapeseed oil (or any vegetable oil) in a frying pan over medium-high heat. Add in chopped onions, garlic, and ginger, then stir fry until fragrant.

3. Add in chilies and mushrooms and stir fry until mushrooms are soft. Add in marinated chicken pieces and cook until they turn more white than pink. Add rice and mix everything together until evenly mixed.

4. Transfer everything into the rice cooker and add water. Add some more salt, perhaps a few pinches. Mix well.

5. Choose the "5-Grain rice" option and press start.

6. Dinner is ready within an hour!

Here are other rice cooker recipes that I have tried:

Fish & Pasta Stew
I used the "Soup" function.

Herbal Chicken Soup with Quinoa Noodles
I used the "Soup" function for the soup, noodles are cooked separately before I served them together.

Pork Congee
I used the "Congee" function.

Quick Chili
I used the "Soup" function. Recipe blogged on this blog post.

Bacon, Vegetables & Quinoa Soup
I used the "Soup" function.
