You are holding a cup of coffee when someone comes along and bumps into you or shakes your arm, making you spill your coffee everywhere.

Why did you spill the coffee?
"Well because someone bumped into me, of course!"

Wrong answer.

You spilled the coffee because there was coffee in your cup.

Had there been tea in the cup, you would have spilled tea.

*Whatever is inside the cup, is what will spill out.*

Therefore, when life comes along and shakes you (which WILL happen), whatever is inside you will come out. It's easy to fake it, until you get rattled.

So we have to ask ourselves…
"What's in my cup?"

When life gets tough, what spills over?

Joy, gratefulness, peace and humility?
Or anger, bitterness, harsh words and reactions?

You choose! 💯

Greener grass

 

Many years ago when I was a full-time working mom, I wanted to be a stay-at-home mom so badly. I wanted to spend more time with my son.

When I was pregnant with my second son, I quit the corporate world, putting an end to my corporate career pathway (I was working in one of the Big 4s).

As much as I want to be a stay-at-home mom full time, I know it'd be financially challenging. Single income in Klang Valley is doable but it's not what my husband and I are comfortable with.

So I opt to be a working from home mom with flexible hours. Sounds like the best of both worlds right? I get to spend time with my kids at home while still can bring back some bacon, so to speak.

The grass is greener where you water it.

I've come to the realization that envying other people's life doesn't mean a thing.

I just need to water the grass at where I am and it will definitely be greener!

Help


Quite some time ago, a church mentor said something along this line: "Don't expect help from people. Don't feel that you're entitled to receive help. You have to help yourself. Any form of help you receive from others along the way, consider them as a bonus."

At that time, I didn't really understand what was he talking about.

Now, having been through different phases in my life, I think, I've begun to understand it better now.

A friend told me recently: "Not forgetting, when you see others in need of help, a simple reach out may mean a lot to the one who's already feeling helpless, even though it's a small gesture from yourself."

As I go through learning curves, this quote solidifies my current experience: "Help others change their lives and, as a result, change yours."

I'm grateful to have met mentors who are here to help and inspire personal growth and make life-changing decisions.

It makes me want to become such mentor too, one day, to help others change their lives.

How to use

There are five types of steamboat soup base - chicken, prawn, miso, tom yam, curry.

Chicken and miso are great for kids. Prawn is great too if no one in the family has shellfish allergy. I personally avoid spicy soup base but if you want to fire up your taste buds, go ahead with tom yam and curry.

I quite like the idea of doing steamboat and BBQ at the same time. So there's soup in the steamboat bottom base where you can throw in an assortment of seafood, vegetables, mushroom, meatballs, etc, and a grill pan on top for grilling marinated meat (lamb, beef, chicken). Awesome, kan?

There is also a spread of cooked finger food such as fried bee hoon, fried rice, chicken nuggets, cocktail sausages, fries, etc. So while waiting for the steamboat and BBQ food to be ready, the kids can have finger food first. You do know children don't like to wait for their food, right?


And of course, a bowl of my favorite ice kacang dessert for a sweet ending! Or, maybe two. There are waffles too. And free flow beverages!

My boy's five-year-old birthday cake by Mommy Jasmine


This is a belated post about my son's birthday cake for his fifth birthday. Time flies! He's five already!

We did a little birthday do and I was supposed to find a home-based baker to bake the birthday cake but it totally slipped my mind!

Praise God that my church friend, Mommy Jasmine offered to bake her signature gluten-free birthday cake for my boy's birthday!

Before I confirmed my order with Jasmine, I asked my boy to choose a flavor. He promptly replied, orange. He also chose Lego Ninjago as his theme.


After discussing with Jasmine, we decided to go ahead with her signature Gluten Free Orange Almond Cake.

The three-layer orange sponge cake was divine! The crumbs were moist, fine, and the citrus-y aftertaste was invigorating. 

Too bad I forgot to snap photos of the elegant layers! We kept on eating and by night time, there was none left!


I also mentioned that I didn't want traditional buttercream frosting (yucky!) or fondant (full of sugar!). So Jasmine used Swiss buttercream frosting instead, which was lighter and more pleasant tasting.

The buttercream frosting between the layers wasn't too thick, which was really nice as you wouldn't feel that all you ate was cream. The Bahasa word for it was jelak.

Since this was a gluten-free cake, there was no normal wheat flour used to bake it. Jasmine used almond flour.

Not only so, it was oil-free and butter-free too! This was definitely one super nutritious cake which was super packed with fiber!


I loved the different hues of blue and cream buttercream decoration around the cake. Almond slices topped the cake beautifully.

My boy added three of his favorite Lego Ninjago minifigures on the cake.

Creamy Tuna & Cherry Tomatoes Veggie Pasta


Veggie pasta used in this recipe is from Foodies with Love, a homegrown healthy homemade dried veggie pasta brand.


Ingredients:
(Serves 2 kids under 5) 


1/2 cup shell veggie pasta by Foodies with Love
1/2 cup spiral veggie pasta by Foodies with Love
1/2 red onion, finely chopped
1 clove garlic, finely chopped
1 can tuna flakes in extra virgin olive oil
2/3 cup cherry tomatoes
220g (half a bottle) Classic Marinara Sauce by Foodies with Love
Pasta water (from cooking the veggie pasta)
1 tablespoon cream cheese

How to: 

1. Boil water in a pot and pour in both types of veggie pasta. Cook for 3-5 minutes. Drain the pasta; remember to keep aside a bowl of the pasta water.

2. Drain the oil from the tuna can into a frying pan and heat it up over medium-high heat. Add in chopped onion and garlic, then stir fry until fragrant. Add in tuna flakes and stir for a few more minutes.


3. Add in cherry tomatoes, Classic Marinara Sauce, some pasta water, and drained pasta. Mix all ingredients until well combined.

4. Finally, stir in cream cheese and simmer until sauce thickens to desired consistency. Season with salt and pepper.

Note: I don't add extra salt and pepper because this meal is for my kids (20-month old baby and 5-year old boy).

5. Serve!
