Herbal soup for health

People say, girls must learn to take care of their health. One essential herbal soup that must be taken at least once a month is called 八珍汤.

Here's an example of pre-packed soup base. Got this from Tesco.

Bring a liter of water to boil and add in the herbs (the white packet). For extra flavor, add in a few pieces of dried Chinese mushroom and some roots (according to my mum, it's 'dong guai'). Let everything simmer in the pot.

While waiting for the soup to boil, clean up a piece of chicken thigh by peeling off its skin and fat layers (as much as possible). Then, put it into the pot. Cover and let it simmer for about 40 minutes or so. Then, switch off the power and leave it overnight.

The next morning, add in another two hard-boiled eggs (cooked separately) after peeling off the shell. Bring everything to boil for about 15 minutes before switching the power to 'low'. In order for the eggs to absorb the goodness of the soup, let them stay immersed till dinner time. The eggs will turn brown and flavorful!

  2. The Chinese sinseh says, hard-boiled eggs will absorb the goodness of the soup, just like herbal eggs (cha yek dan). He says, the eggs are far better than the meat used to cook the soup.
