"Eat the Rainbow" is a nutritional guide to ensure that we are benefiting from a wide spectrum of vitamins, minerals, and phytonutrients provided by fruits and vegetables from each of these color groups: red, orange, yellow, green, blue/purple. 

Each colorful fruit and veggie is packed with phytonutrients that bring their own shares of valuable ways to boost our immunity, keep us healthy, and make sure we are fit as a fiddle and can perform at our best! These nutrients are found across the rainbow color spectrum, but certain colors are especially rich in powerful protectors.

We can plan our kids' meals based on our knowledge about this rainbow nutritional guide.

RED

Supplies lycopene that protects the skin from sun damage and may help against certain cancers.

E.g. Tomatoes, beetroot, red onions, red bell peppers, red spinach, cherries, pomegranates, red grapefruit, watermelon, red apples, raspberries, red grapes, red pears, strawberries, watermelon

ORANGE

Packed with carotenoids, which the body converts to vitamin A for healthy skin. It also plays an important role in vision and in bone and cell growth. Powerful flavonoids functions to stave off inflammation and blood vessel damage caused by poor diets.

E.g. Butternut squash, orange sweet potatoes, carrots, pumpkin, mango, papaya, nectarines, apricots, peaches, oranges, persimmons, tangerines, hami melon

YELLOW

Supplies lutein and zeaxanthin - which protect the eye from damage and help reduce the risk of developing cataracts.

E.g. Sweetcorn, yellow bell peppers, yellow zucchini, honey dew, golden kiwi, lemon, pineapples, yellow pears

GREEN

Rich in energizing chlorophyll that may decrease the risk of liver cancer.

BLUE/PURPLE

Good source of protective anthocyanins, which are great anti-agers.

E.g. Aubergines/eggplants, purple cabbage, purple cauliflower, purple carrot, purple sweet potatoes, black olives, blackberries, blueberries, purple grapes, blackcurrants, plums, figs


WHITE/TAN

Strengthens immune system, provides antifungal and antibacterial benefits, and reduces free radical damage.

E.g. White onions, garlic, ginger, fennel, cauliflower, mushrooms, parsnips, turnips, potatoes, bananas




Recipe: 7-Fruits Rainbow Smoothie


Ingredients:

1 green kiwi (green)
1 small banana (white/yellow)
10 seedless grapes (red/purple)
1 orange (orange)
10 blueberries (blue/purple)
4 strawberries (red)
8 raspberries (red)
1 cup fresh milk
1/2 cup Greek yogurt

Cut bigger fruits into smaller chunks. Put all ingredients into a blender and pulse until smooth. If the smoothie is too thick, add more milk to thin it out until you get the consistency that your kid enjoys.
