Mixed beans stew with vegetables


You can buy this pack of Organic Soup Mix Beans from Country Farm Organics outlet. The beans are green lentils, yellow lentils, red lentils, pinto beans, adzuki beans, black beans, garbanzo beans, mung beans, oat groats, and white kidney beans.

I soak about 2/3 cup (I use a kitchen measuring cup) of beans overnight before tossing them into 900ml of water in a slow cooker.


Vegetables in the stew are butternut squash, carrot, purple carrot, orange sweet potatoes, snow peas, and onions. I add 2 tablespoons curry powder and some salt to taste.


Serve with warm bread after four hours. :)
