Whole Wheat Blueberry Banana Bread

Blueberries. Bananas. I got these two gorgeous fruits to "marry" one another and baked a loaf of quick bread packed with wholesome goodness!

Recipe adapted from here.

Ingredients:
(Yields one 9"x5" loaf)

2 cups whole wheat flour
1 teaspoon baking powder
1/4 teaspoon salt 
2 tablespoon molasses sugar 
1 tablespoon virgin coconut oil
2 large egg whites, room temperature
1 teaspoon pure vanilla extract
3/4 cup mashed ripe banana
1/4 cup Greek yogurt
1/4 cup fresh milk
1/2 cup fresh blueberries
1/4 cup dried blueberries
1 tablespoon flax seeds
1 tablespoon sunflower seeds
2 teaspoons demerara sugar (optional)


How to:

1. Preheat the oven to 175°C. Line a 9”x5” loaf pan with baking paper.

2. In a small bowl, whisk together flour, baking powder, salt, and sugar. In another bowl, whisk together coconut oil, egg whites, and vanilla extract. Stir in mashed banana, Greek yogurt, and milk.

3. Combine flour mixture into the wet ingredients mixture. Fold gently with a rubber spatula until just combined. Fold in both types of blueberries until combined. Be gentle. Batter will be thick.

4. Spread the batter into the prepared loaf pan. Sprinkle flax seeds, sunflower seeds, and demerara sugar (if using) over the top.

5. Bake for 50 minutes, or until a toothpick inserted into the center comes out clean. Cool in the pan for 10 minutes before transferring to a wire rack.

I love my banana bread with visible banana chunks.

Crunchy top from the demerara sugar and seeds.

This loaf is gone within three days!

  1. It's so healthy using flax seeds, sunflower seeds, wheat flour, yogurt etc. yummy! I like the last few close-up shots ... made me drool..
