5-grain/seed mix stews & orzo pasta stews - toddler meals

My homemade 5-grain/seed mix consists of three kinds of wild rice from Sarawak, red lentil, and amaranth seed.

This is how orzo pasta looks like. I bought a packet of orzo from iHerb in my recent purchase. Orzo (Italian for "barley"), is a form of short-cut pasta, shaped like a large grain of rice.

Orzo Pasta Stew (spinach, potato, onion, garlic)

Ingredients:
(Serves 2 meals)

10g unsalted butter
1 & 1/2 tablespoons plain flour
50ml water
125ml milk
1 small red onion, chopped
2 cloves garlic, chopped
1 medium potato, cut into cubes
1/2 cup frozen spinach balls, thawed
100ml cooking cream
2 cups water
1/4 cup orzo pasta, cooked & drained

In a saucepan, melt butter and stir in flour to form a roux. Cook over low heat for a couple of minutes, then off the heat and start adding water a little drop at a time, stirring well after each addition to make sure the liquid is well incorporated and the mixture is lump free. Stir in milk the same way. Return to heat once all the liquid has been added and bring to the boil, stirring all the time. The sauce will thicken considerably. Once it's boiling, reduce heat and let it simmer for about four minutes to cook the flour.

In another pan, heat up some olive oil and stir fry onions and garlic until fragrant. Add potatoes and stir fry for about five minutes, adding splashes of water to prevent drying up. Add water and simmer for about 10 minutes. Add in thawed spinach, cooked orzo, roux, and cooking cream. Bring to a boil, reduce heat and let it simmer for about 8-10 minutes.
