Egg, Bacon and Spinach Pizza
This week at IHCC, we are making any Ellie Krieger's recipe for food we can hold and/or eat with your hands such as sandwiches, wraps, snacks, finger foods, cookies, candies, and more!
The first food that comes to my mind is PIZZA! Hey, who eats pizza with fork and spoon, right? The best way to eat pizza is definitely with our bare hands! Hahaha! Thank goodness Ellie has a number of scrumptious pizza recipes that I can't wait to try out!!!
This time round, I choose Ellie's Egg, Ham (I substitute with bacon bits) and Spinach Pizza.

This time round, I choose Ellie's Egg, Ham (I substitute with bacon bits) and Spinach Pizza.
Ingredients:
(Serves 3)
1 regular-size store-bought frozen thin-crust pizza base
2 tablespoons tomato paste
2 cups frozen spinach, thawed, drained & coarsely chopped
2 teaspoons olive oil
1 cup bacon bits
1/2 cup grated Parmesan cheese
1/2 cup grated Mozzarella cheese
3 eggs
A handful pine nuts
How to:
1. Preheat oven to 200°C. Line a baking tray with baking sheet. Place the pizza crust on the baking sheet.
2. Spread tomato paste on the crust. Scatter the spinach evenly. Drizzle with olive oil. Then, scatter the bacon bits, Parmesan, and Mozzarella on top. Crack eggs onto pizza. Top with pine nuts.
3. Bake for 25-30 minutes, until eggs are fully cooked.
Note: Bake for 12-15 minutes if you want runny egg yolks.

DeleteOh yes, pizza definitely MUST be enjoyed with your hands. Eating it with a fork just isn't the same! This version looks so yummy - I am such a fan of eggs being a topping on just about anything. They are so inviting! Two slices for me please:)
